Makes 6 servings3 Tbsp olive oil 1/4 c finely chopped romaine lettuce 1 1/2 lbs shelled fresh peas 1/4 c minced shallots or white part of green onion 1 large sprig parsley 2 tsp sugar 1 tsp salt 1/8 tsp white pepper 1. Heat oil in a saucepan over medium heat. Add lettuce, then peas, shallots, parsley, sugar, salt and pepper. 2. Reduce heat and simmer covered, 10-15 minutes, or until peas are just tender. Stir occasionally. Remove parsley sprig before serving.
