California Caviar
Makes 8-10 servings
1 1/4 c dry black-eyed peas
3 c water
1 c chopped green pepper
1/2 c chopped green onion
1/4 c diced red bell pepper
1/4 c jalapeno chilies,
seeded and minced
3/4 c Italian salad dressing
1. Place beans in large pot with water;
bring to a boil, reduce heat and simmer
45–50 minutes or until beans are just
barely tender.
2. Drain and rinse with cold water.
3. In bowl, mix beans with green pepper,
green onion, red pepper, chilies, and
salad dressing. Chill.
Serve over lettuce or as dip.
