Strawberry Rhubarb Sauce

1 lb strawberries, halved
1 lb rhubarb, washed and
cut into 2-inch pieces
1 1/2 c sugar
2 vanilla beans split in
half lengthwise
1. Place strawberries, rhubarb, sugar and
vanilla beans in large saucepan over
low heat. Stir constantly until the sugar
2. Bring to boil, then reduce heat and
simmer 20 minutes. Serve hot or warm
over vanilla ice cream.
Alternative method: Omit vanilla beans. After
removing pan from heat, stir in 1 Tbsp vanilla.
