Makes 6 servings4 medium sweet potatoes Vegetable oil spray 1 Tbsp margarine 1/4 c orange juice 2 Tbsp chopped walnuts 1/4 tsp nutmeg 1. Boil whole sweet potatoes 25-30 minutes or until tender. Drain and run under cool water to cool slightly. Peel and mash. 2. Add margarine, juice, nuts and nutmeg. Mix well. 3. Spoon mixture into 1-quart casserole treated with vegetable spray. Bake at 375 degrees, uncovered, 25 minutes. Serve hot.
