Makes 2 pies
3 large sweet potatoes, peeled, sliced and boiled till tender 1 c butter 1 1/2 c sugar 4 eggs, well beaten 1/2 c buttermilk 1 tsp vanilla 2 unbaked 9-inch pie shells 1. Mash potatoes with butter while hot. Beat in sugar and eggs. Add milk and vanilla; mix well. 2. Pour mixture into pie shells. Bake at 300 degrees 1 hour, or until knife inserted in center comes out clean.
