Sweet Potato Pudding

Makes 6 servings

4 c peeled and grated sweet
potatoes
1/2 c sugar
1/2 c brown sugar
1/3 c butter, melted
1 tsp cinnamon
1 1/2 c half and half
1/8 tsp salt
1 tsp nutmeg
3 eggs
 
1. In mixing bowl, combine potatoes,
sugar, brown sugar, butter,
cinnamon, evaporated milk, salt
and nutmeg.
2. Beat eggs well. Add eggs to
mixture and blend.
3. Pour mixture into greased 1-
quart casserole. Bake at 350
degrees 1 hour. Serve warm.
