Makes 6 servings
3 large tomatoes, sliced 1 tsp minced garlic 2 Tbsp olive oil Black pepper, to taste 2 Tbsp toasted pine nuts 2 oz. blue cheese 1 Tbsp chopped parsley 1. Arrange tomatoes on platter. Mix garlic with oil and drizzle over. 2. Sprinkle with pepper and pine nuts and top with crumbled cheese and parsley. Let sit at room temperature 15 minutes before serving.
