Zucchini with Chopped Tomatoes

Makes 4 servings

1 tsp soft butter
2 small onion, chopped
4 small (6-inch) zucchini,
thinly sliced
2 tomatoes, chopped
Black pepper, to taste
 
1. In a large nonstick skillet, melt
butter over medium-high heat.
Add onions; sauté until softened.
2. Add zucchini; sauté 2 minutes.
3. Add tomatoes; cook for 3-5 minutes,
or until zucchini is tender-crisp.
Season with pepper, and serve.
